Production: A "natural" or "ancestral" sparkling wine where yeasts remain in the bottle after refermentation. Made from a blend of Chardonnay and Pinot Noir.
Tasting Notes: Turning the bottle upside down allows the yeasts to mix, enriching the taste. Refreshing with a turbidity from the sediment.
Gastronomic Pairings: Excellent with fish (especially raw) and Oriental cuisine. Also, try with fresh goat cheese.
