Winemaking

The grapes (100% Sangiovese), selected and harvested manually at the beginning of the second ten days of September, have a consistent skin thickness and a good polyphenolic content given by the excellent ripening of the grape seeds.

Fermentation takes place in temperature-controlled stainless steel tanks, with maceration of the skins lasting approximately 14 days at controlled temperatures ranging from 18°C ​​up to a maximum of 28°C in the final stages, all coordinated with pumping over operations that facilitate correct polyphenolic extraction.

Aging

Malolactic fermentation takes place in stainless steel tanks where it continues to refine for a further 9 months.

After this period the wine is bottled, where it matures for another 3 months before being placed on the market.

Organoleptic characteristics

Intense ruby ​​red color with light purple reflections, it has an intense fruity character with hints reminiscent of ripe red fruit and cherries in alcohol. The taste is warm, soft and full, deep and velvety tannins that harmonize well with the freshness of the wine that give it a very pleasant drinkability.

Mezzodì wine, if stored correctly, has a good prospect of aging in the bottle.

It pairs well with cured meats and medium-aged cheeses and first courses with meat and game sauces.

We recommend a serving temperature of 16°C in medium-sized glasses.
