The grapes are picked by hand
The grapes are dried for about 3 months in a special part of the cellar called “Fruttaio”. The grapes are placed on “Stoie” to dry…. hence the name of our Vin Santo “Le stoie”. “Le stoie” are special structures made with babu canes that allow the grapes to be supported, but at the same time allow air to circulate so that the grapes can dry and lose vegetative water.
During this drying period the grapes lose water, thus concentrating the sugars and all the primary flavors of the grapes.
Generally during the Christmas period, the dried grapes are softly pressed, obtaining a grape juice with a high sugar concentration. The must is then placed in caratelli (small wooden barrels) where the natural alcoholic fermentation begins. The wine will age for 6 years in the barrels. During this period the Vin Santo will acquire its characteristic aromas of fruit, hazelnut and almond. The wine then rests for at least 3 years in the bottle... after which it is ready to drink.
Vin Santo has great potential to age in the bottle... it can age in the bottle for 10\20\30 years... the older a Vin Santo is, the more fantastic it will be to drink!
